RASPBERRY AND LEMON GUMMIES

INGREDIENTS

1 cup frozen raspberries, thawed

1/3 cup lemon juice

3 tbsp honey

3 tbsp Gelatin

Filtered water (enough to just cover the gelatin to bloom)

METHOD

1.In a glass, combine the gelatin and water and set aside to bloom (for about 10 minutes).

2. Blend the thawed raspberries and lemon juice together in a food processor or blender.

3.Pour mixture through a sieve into a bowl, pushing with the back of a spoon to remove excess seeds.

4.Place the lemon and raspberry mixture into a pan on a medium heat until it starts to bubble. Remove from heat and set aside to cool for 1 minute.

5.Mix the bloomed gelatin and honey in with the raspberry mixture and return to a low heat, stirring until the gelatin has dissolved. Set aside to cool for 5 minutes.

6.Using a teaspoon, spoon the mixture into the moulds and place in the refrigerator to set for 30+ minutes.

Notes:
You can substitute the honey for maple syrup or stevia drops. Test a small amount and taste for sweetness to your liking

Storage:
Keep in an airtight container in the refrigerator and they should last at least one week.
