MANGO CHICKEN SALAD
Ingredients
300 grams spinach and lettuce leaves
2 mangoes, peeled and cut into thin slices
2 peaches cut into thin slices
250g punnet of cherry tomatoes sliced
½ cup fresh basil
½ cup fresh mint
1 small red onion finely chopped
1 cucumber halved and thinly sliced
2 free range chicken breast, cooked and thinly sliced (serve cold)
DRESSING
¼ cup of olive oil
¼ cup of fresh lemon juice
Sea salt
METHOD
1. Combine all salad ingredient together
2. Cook chicken breast in pan with olive oil or on the BBQ Cool down and add to salad
3.Drizzle over salad dressing
